Easy to make – dependable success
No special technique needed: the batter comes together quickly, and folding in whipped egg whites helps create a light, airy texture.
Preparation (based on the pouch)
Separate 6 larger M eggs (approx. 65 g/egg).
Whip the egg whites with a pinch of salt until stiff peaks form.
Mix the yolks with 65 g erythritol until pale and creamy.
Add 40 g freshly squeezed orange juice, 30 g warm coconut oil, and the zest of half an orange, then mix in the flour blend.
Gently fold in the whipped egg whites.
Fill a bundt pan with 3/4 of the batter.
Sift 1/2 tbsp cocoa powder into the remaining batter and spoon it into the pan as well.
Bake with fan at 175 °C for 40 minutes, then turn out onto a rack and bake at 160 °C for 10 more minutes.
